How to Not Screw It Up
Thaw Properly
24–48 hours in the fridge. Never the microwave. Pork deserves patience.
Bring to Room Temp
20–30 minutes on the counter. Cold pork straight from the fridge = uneven cook every time.
Season It Right
Salt, pepper, and smoked paprika. For ribs: add brown sugar and cayenne. Keep it simple, keep it bold.
Match the Heat to the Cut
Chops → screaming hot cast iron. Ribs → 225°F low and slow for hours. Tenderloin → sear hard, finish in the oven.
Don't Overcook It
145°F is the USDA minimum. Slightly pink in the center is safe and correct. Push past it and you've wasted a great piece of pork.
Rest Before You Slice
5 minutes minimum. Carry-over cook is real. Let it finish on its own.
